OVERVIEW:

The Shukara plum is a small, lush, purple, fruit that glitters when the light hits it. It is sometimes known as the "dark sun fruit." Shukara are harvested in the early morning, so that it retains most of the moisture, which aids in the final pulp processing.
The pulp is then left out in the sun where it is dried for up to a month. The pulp then becomes very brittle and crystalline, and can be crushed down into a small sweet grain form called Shukara spice.
